- Hand-harvested into crates and selected on a sorting table, with yields of up to 1 kg per vine. Natural vinification with indigenous yeasts in glazed concrete vats with gentle manual pump-overs. Spontaneous malolactic fermentation in wood and 15–18 months of ageing in concrete, 40 hl French casks, tonneaux and barriques.
