Semi-carbonic whole-bunch vinification in the Beaujolais style for 3-5 days. Hand-harvested, with a combined technique of traditional alcoholic fermentation and intracellular fermentation of the grapes, which creates the taste and aromas so specific to a young wine. Part of the grapes undergoes hot preferential maceration to obtain a deep colour with intense aromas. By tradition, the wine is released on the third Thursday of November, and this is a big celebration for wine lovers. Every year the new vintage is greeted with the phrase Le Beaujolais Nouveau est arrivé! (The new Beaujolais has arrived!). This day was established by law in 1985 as the day of the official presentation of Beaujolais Nouveau, and the creator of the marketing name Beaujolais Nouveau is the producer Georges Duboeuf, who first used it in the 1960s.
