The characteristic taste and distinctive aroma of Ouzo Plomari are the result of a family recipe inherited from Isidoros Arvanitis, which he kept a closely guarded secret. The recipe is divided into two parts: one for the first and one for the second distillation. Each part is known by heart by only one person at the distillery. One person knows the fruits and herbs for the first distillation, and the other the fruits and herbs for the second distillation. In total, the recipe contains more than 15 fruits and herbs from the island of Lesvos: dill, anise, cinnamon, nutmeg, mastic extract and others.
