Sake, the exotic drink from the Land of the Rising Sun, is certainly not the most popular in our part of the world, but that does not stop you from enjoying it. Since sake is very close to the idea of a rice wine, there are several categories that define the qualities and flavour characteristics of each sake. This category is called Daiginjo and is regarded as the highest class. For a sake to enter this category, the rice used must be precisely milled down to at most 50% of its core remaining. It is this core, which holds the concentration of starch, that is key to making good sake. To emphasise the light texture and fine notes, sake masters add a little alcohol to every sake in the Daiginjo category. You will best enjoy this sake if you have chilled it in the refrigerator beforehand.
