- Loess soil rich in clay, with schist, marl and sandstone, at 300 m above sea level with a south-east exposure; the clay retains the moisture Merlot needs during the dry Tuscan summer.
- Ageing
- Hand-harvested into crates and selected on a sorting table. Natural vinification with indigenous yeasts in concrete vats with gentle, frequent manual pump-overs. Spontaneous malolactic fermentation in wood and 18–20 months of ageing in French barriques, one third new, with regular bâtonnage during the first 6 months.
