- Ageing
- The Carignan is hand-picked and undergoes 14 days of carbonic maceration at a controlled temperature; the Grenache and Syrah are destemmed and vinified traditionally. The varieties are fermented separately, blended after malolactic fermentation, and the wine rests for 6 months in tank before bottling.
