The Carl Jung winery was founded in 1868 and was the first winery in the world to develop and patent a method for de-alcoholising wine, in 1908. The Carl Jung method, for which the company holds three patents, remains unsurpassed to this day. The alcohol is extracted from the wine at extremely low pressure and a temperature of 29 °C. The natural wine aromas released during distillation are reintroduced, leaving the wine's bouquet almost completely intact. The resulting wine contains only de-alcoholised wine, with no added grape juice or artificial flavourings.
