Made from the three principal grape varieties of Champagne, Pinot Noir, Pinot Meunier and Chardonnay, and entirely vinified in oak barrels, this cuvee demonstrates personality and expressivity. A temperament which first shows itself in the deeply colored robe of great luminosity constellated with fine, regular bubbles. Its aromas are intense, concentrated and rich, evocative of dried fruits, citrus and white fruits evolving to more smooth complex notes resulting from the barrel ageing, and finally traces of vanilla. In the mouth the texture of the Billecart-Salmon Brut Sous Bois is beautifully elegant, silky and smooth. The sensation of freshness and power intermingle harmoniously, with lightly grilled notes characteristic of great oak aged champagnes leading to soft spices and toasted undertones on the final of exceptional length.
The marriage of Francois Billecart and Elizabeth Salmon gave birth to one of the finest champagnes in the world. The patch of land in Mareuil-sur-Ay was where the first Billecart began. It was initially used as a tennis court, vegetable, and greenhouse. Later this one hectare of land was judiciously used to start Pinot Noir and currently houses the rarest Cuvee. With the sixth generation of winemaker brothers, Francois, and Antoine Roland Billecart have taken the brand to the next level. They have worked on astounding numbers. This world-renowned wine has formidable production of 1.7 million bottles a year. Thus, the wine is stored in oak barrels for vinification without any dosage.
