Winemaking
Viognier, cultivated historically in the north of the Rhône Valley, had almost completely disappeared after the phylloxera crisis. The winegrowers have worked hard to restore it to its former glory. The production represents only 2650 bottles. The grapes come from plots selected for their exhibition and the harvest is done by hand. On arrival of the grapes, a very gentle pressing is carried out. Vinification and aging take place in part in oak barrels on fine lees with regular stirring to bring richness and complexity.
